About Us

The Bittersweet chocolate journey began in 2018 with a Vespa ride along the Mekong River. Explorations into renowned cacao-growing regions of the Mekong Delta connected us with dedicated local farmers and time-honored cultivation and fermentation practices.
Driven by a strong belief in the quality of Vietnamese cacao beans and inspired by creative use of local ingredients, we crafted distinctive chocolate flavors and embarked on a mission to bring the first handcrafted chocolates made directly on Phu Quoc Island to discerning consumers.
Ingredients & Origin

Cacao-Growing Regions:
Vietnam is among the most promising regions for cacao cultivation, thanks to its favorable climate and fertile soils.
Distinctive Characteristics:
Cacao trees are intercropped under coconut canopies, producing beans with fresh, fruity notes and a uniquely bright flavor profile.
Harvest Seasons:
Main harvest periods occur from April–May and October–November.
Bean Selection:
Cacao varieties are carefully researched and selected to suit specific soil conditions and microclimates, ensuring consistent quality and optimal flavor expression.
Handcrafted “Bean to Bar” Process

From the Farm
- Ripe cacao pods are hand-harvested, beans are extracted, fermented to develop complex aromas, and sun-dried naturally.
- The dried beans are then packed and transported to our factory.
At the Bittersweet Factory

- Roasting cacao beans to unlock signature flavor notes
- Cracking and winnowing to obtain cacao nibs
- Grinding nibs into cacao mass, blended with sugar and selected ingredients
- Refining and conching for smooth texture and balanced flavor
- Tempering for a glossy finish and perfect snap
- Molding, cooling, and hand-packaging in premium, environmentally friendly packaging
